After almost 50 years of success in the international vinegar market, Messino has launched its most innovative product to date: Messino Balsamic Pearls. The Pearls line has been created by Messino based on its long experience and expertise in vinegar production, following the latest global trends in gastronomy.

The raw material of Messino Balsamic Pearls is our aged balsamic vinegar, made from a mixture of Greek wine vinegar and concentrated grape must, aged for at least eight months. Using the reverse spherification process, we have encapsulated all the flavour and acidity of Messino Balsamic Vinegar in a single sphere with a thin outer layer and a juicy core. In addition to their striking appearance, Messino Balsamic Pearls offer an intense taste experience, that explodes in your mouth and fulfills all your sensations.

SERVING SUGGESTION:

Let Messino Balsamic Pearls inspire you to create unique texture and flavour combinations and enjoy molecular gastronomy at home. Enhance any green salad such as lettuce, spinach or arugula, or cheese salad such as Italian Caprese. Garnish any cheese or sausage platter, bruschetta or sandwich with a few pearls. Decorate your roasts or grilled fillets to heighten the flavour and impress all your guests, even the most demanding.
The pearls are exclusively used for garnishing your food, desserts, or beverages.

Production:
First, we carefully selected the ideal batch of balsamic vinegar and prepared the necessary mixture to produce the pearls. The balsamic solution is fed into the reverse spherification machine, where the pearls are produced one by one with a single drop of balsamic vinegar. The pearls are finished and solidified by rotation inside a long tube. The cultured pearls are thoroughly cleaned with water and then collected and stored in a small tank. The final product is then sorted and packaged by hand to measure the exact quantity and ensure the highest quality. The Messino Pearl line is produced and stored according to HACCP quality standards and is ISO 22000:2018 and FSSC:22000 certified.
