The Pearl line, by Messino, has been created based on its long-term experience and expertise in vinegar production, but also on the latest global trends in gastronomy.
The raw material for Messino Truffle Balsamic Pearls is our aged balsamic vinegar, made from a blend of Greek wine vinegar and concentrated grape must, aged for at least six months. The aged balsamic vinegar is enriched with a natural extract of Greek truffles. Through reverse spherification, we have encapsulated the full flavour and acidity of Messino balsamic vinegar and the earthy taste of Greek truffle in a single sphere with a thin outer layer and a succulent core. In addition to their impressive appearance, Messino Balsamic Vinegar Pearls offer an intense flavour and aroma experience, exploding in your mouth and fulfilling all your sensations.

Production:
First of all, we carefully select the ideal batch of balsamic vinegar to be infused with Greek truffle extract and prepare the necessary mixture to produce the pearls. The balsamic solution is introduced into the reverse spherification machine, where the pearls are produced one by one with a single drop of balsamic vinegar with truffle. The pearls are finished and solidified by rotation inside a long tube. The cultured pearls are thoroughly cleaned with water and then collected and stored in a small tank. The final product is then manually graded and packaged to measure the exact quantity and ensure the highest quality. The Messino Pearl line is produced and stored according to HACCP quality standards and is ISO 22000:2018 and FSSC:22000 certified.
