White Balsamic Pearls

After almost 50 years of success in the international vinegar market, Messino has launched its most innovative product to date: Messino Balsamic Pearls. The Pearls line has been created by Messino based on its long experience and expertise in vinegar production, following the latest global trends in gastronomy.
Messino White Balsamic Vinegar is produced from concentrated grape must of the highest quality and white wine vinegar, from Greek wine varieties. A unique drop of our white balsamic vinegar is transformed through the process of reverse spherification into a perfect crunchy sphere that explodes in your mouth. Almost transparent and delicate, the White Balsamic Pearls are preserved in the original White Balsamic Vinegar and have a bold intensity and a refined balsamic note and aroma.

SERVING SUGGESTION:

Messino White Balsamic Pearls offer the opportunity to create unique texture and flavour combinations and enjoy molecular gastronomy at home. Use it to garnish any seafood or fish, such as anchovies or sardines, or fatty fish such as salmon. Try adding mild acidity and rich flavour to salads or grilled vegetables. Dare to spice up any bland soup or cold starter, garnish your unique cocktails and enjoy the crunchy texture and explosive flavour. The pearls are exclusively used for garnishing your food, desserts, or beverages.

Production:
First, we carefully select the ideal batch of white balsamic vinegar and prepare the necessary mixture for the production of the pearls. The balsamic solution is fed into the reverse spherification machine, where the pearls are produced one by one with a single drop of white balsamic vinegar. The pearls are finished and solidified by rotation inside a long tube. The cultured pearls are thoroughly cleaned with water and then collected and stored in a small tank. The final product is then sorted and packaged by hand to measure the exact quantity and ensure the highest quality. The Messino Pearl line is produced and stored according to HACCP quality standards and is ISO 22000:2018 and FSSC:22000 certified.
