Gazpacho Soup
Gazpacho soup originates from Andalusia and is one of the most famous cold soups. It is a cool and aromatic tomato soup, with Mediterranean ingredients! The flavor balance of the recipe, combined with its simplicity and freshness of the raw materials, creates an excellent result.
Gazpacho Soup
Gazpacho soup is actually a mashed Greek salad and fits perfectly in Greek cuisine. We create a mixture of rich flavors with fresh and juicy vegetables, while Messino red wine vinegar offers extra aroma and acidity
Ingredients
- 1 kilo red cherry tomatoes
- 1 red bell pepper
- 1 small cucumber
- 1/2 dry onion
- some fresh basil
- 100 ml olive oil
- 20 ml MESSINO red wine vinegar
- 2 slices traditional bread
- some sugar
- salt
Instructions
- Washour vegetables well and coarsely chop the cherry tomatoes, pepper, cucumber, onion, and bread and put them in a bowl
- Addthe olive oil, Messino red wine vinegar, salt, and sugar and mix them with our hands, pressing them with force
- Once homogenized enough, cover the bowl with plastic wrap and refrigerate for 2 hours until the flavors are combined
- Add the mixture to the blender and mix until it becomes puree. If you enjoy spicy tastes, you can even add 1/2 chili pepper
- Serve the soup cold in small bowls and garnish with fresh basil leaves, pepper, and olive oil

- Handmade croutons can elevate your recipe, giving it some crunchiness! Croutons are so easy to make:- Cut some bread into small cubes (crumb and crust).- Drizzle them with olive oil, dried basil, and garlic, and mix gently with your hands.- Bake in the oven for 15' and enjoy them over your gazpacho soup!
