Mixed Green Salad with Pomegranate and Apple

Our idea of a mixed green salad is highlighting a basic kale salad with a few special ingredients, such as Greek manouri cheese and Messino Pomegranate balsamic Cream. The leafy flavor of kaleis surprisingly combined with intense green apples and is perfectly balanced by the sweetness of the pomegranate. A light meal so easy to make and so adjustable to anyone’s taste.

Ingredients
  

  • 1 lettuce
  • 1 kale
  • 150 gr Green apple (in sticks)
  • 100 gr Pomegranate seeds
  • 30 gr walnuts
  • 80 gr Manouri cheese

For the vinaigrette

  • 6 tbsp olive oil
  • salt
  • pepper
  • 6 tbsp Messino Pomegranate balsamic Cream
  • 1 tbsp mustard
  • 1 tsp honey

Instructions
 

  • Wash your vegetables and let them strain
  • Chop the lettuce, the kale, and cut the green apple in sticks (or as you wish) and break the walnuts into big pieces. Add everything in a large bowl.
  • Add all the vinaigrette ingredients to the blender and blend well until homogenized
  • Pick up a medium non-stickpan and add some olive oil.  When it ishot enough add the manouri and grill for 2 min. at each side
  • In the vegetable bowl add some pomegranate seeds and the vinaigrette. Stir everything well. When thevinaigrette covers all the ingredients the salad is ready to be served
  • Serve the salad on a deep plate. Cut the grilled manouri cheese into large pieces and decorate over the salad. Drizzle some more Messino Pomegranate balsamic cream on top and Voila! 

Extra tip:

  • Try replacing the kale with iceberg or lollo rosso and the walnuts with toasted pine nuts
  • Add some gorgonzola or any other white cheese you like for a fuller saltier taste
