Greek cabbage salad or Politiki is a traditional salad, consisting of a variety of colorful and tasty vegetables. Mainly eaten during winter time, Politiki’s main ingredients are cabbage and carrot, but there are many variations.

Greek cabbage and carrot salad (Politiki salad)

In our version, you can find three surprising ingredients: Apple, raisins and Pasto, a Greek salted pork originating from Kalamata. Messino apple cider vinegar highlights all the different flavors and offers you a flavorful dish you can enjoy with every meal

Ingredients
  

  • 300 gr cabbage
  • 4 medium carrots
  • 150 gr celery root
  • 100 gr green apple
  • 1 red bell pepper
  • 1 cl garlic
  • 100 gr olive oil
  • 80 gr Apple cider vinegar MESSINO
  • 60 gr raisins
  • salt
  • 1/2 bunch parsley
  • 50 gr Pasto– salted pork (optionally)

Instructions
 

  • Wash the vegetables and drain them
  • Chop celery root, apple, and bell pepper into thin sticks
  • Grate cabbage and carrots
  • In a large bowl mix chopped vegetables with finely chopped parsley and grated garlic
  • Pour with apple cider vinegar and olive oil and season with salt
  • Use your hands to mix the ingredients and slightly rub them. Cover with a plastic film and put in the fridge for the salad to be marinated
  • When the salad is ready serve with raisins and optionally with salted pork (pasto)

Extra Tip:

  • Wait at least two hours, for your salad to be marinated, to enjoy extra flavors.
    Also, if you love spiciness,  add a chopped chilipepper.
